I feel like the electric driveline is vastly underutilized for small coupes. The battery would add weight sure but would imitate the mid-engine weight distribution fine. And a car that doesn't need to haul family also has lots of space to pack battery, and the low air resistance also means better range. As a Grand Tourer, a quiet driveline with instant torque is also really nice to have.

Why haven't we had a coupe renaissance via electric?

Battery packs that are good enough to last 200+ miles are big. And they need to be shielded. They put them at the bottom of the car so the rest of the car is raised above that. Their motors and cooling systems limit good suspension. Their software somehow sends torque to the wheels that don't have traction. All this shit also gets in the way of a good suspension, they rely on expensive tires for grip. A tesla model y battery pack is over half the weight of an entire miata, over a thousand lbs. And that doesn't factor the driveline, motors, and cooling system. No doubt with coolant the battery pack is even heavier.
If you need 1,200 in batteries to compete with a 2,200 lb car, it's not happening.

Years ago I saw a video about a guy making hub motors for cars. The idea is to replace the brakes with the motors for around town shit, and keep the ICE for longer trips. Seemed like a good middle ground.

Look up the energy density of batteries today compared to 9 years ago. And cell-to-pack allows even more energy for less amount of weight. Current EVs don't have a problem with low speed torque. So the batteries seem to be able to provide the necessary current.
The few EVs that use 2 speed gears don't use them for low speeds but for high rpm, where some motors become less efficient - but there are other ways to deal with this like electrically excited motors.

Yes a two-seater coupe brings a lot of space to store battery, and should open up trunk space even more. The limiting factor will be weight. I don't think people should expect 400 mile light EV coupes. 250 mile is probably fine, so long as it can charge decently fast.
