Because they don't want retards giving their cars a bad (worse) name by crashing at 180mph and disintegrating a family of 4 on the highway. 155 is already completely insane as it is. In stock form you're going to really struggle to hit that speed. According to google you need about 17 seconds and nearly a half time to reach that speed from 60mph. Then it takes an extra 15 seconds just to get from 155 to 180. 32 seconds of flat out pedal mashed acceleration is way, way harder to do than you think.
