Problem is it's almost all wasted space. There's almost nothing actually being displayed across that entire main screen. Oh you can watch videos yeah but not really. The actual video player is tiny because the screen is so wide but not very tall. And no one's watching youtube on it anyway. If it's in the backseat then okay because you got kids back there but imagine how pathetic it would be to be on a car ride with just one passenger and they're watching hulu the whole trip.

That's actually an opportunity.
There's a 'rotatable' media format being trialed which is aimed towards phones. The idea being you can rotate your phone while keeping the image in orientation which changes what the viewer can see at the edges of the shot.
In theory it wouldn't be too hard to expand this to a panoramic format where the viewer can scroll horizontally across the scene. Superwide displays such as cars could potentially accommodate the whole image without needing to scroll.

I worked with a guy in Phoenix who fitted a small LCD screen to the passenger side sunvisor in his shitbox Honda.
He'd swing it over so it was facing out the passenger side window, and play hardcore porn videos, while recording out that window with a small camcorder.

There absolutely are some controls that need to stay as physical buttons etc. but a screen is handy to cram in all sorts of adjustment controls that you only need every once in a while.

Frankly screens themselves aren't the issue, it comes down to if the manufacturer has any sense designing interiors.
