I did a small part a long time ago but going north to visit my family in Champagne
There was basically no one hiking in these parts, still met a couple of pilgrims, I remember one was going all the way to Jerusalem

you'll be no more than a few hours from civilization so don't sweat it

there are some very urbanized sections, in Tuscany you'd go through 38 towns/villages in 380km so finding a spot to put down your tent in might be a pain in the ass at times

just so you know, for the france part wild camping per se is outlawed, but we do make a difference between wild camping and bivouac that is allowed, but still follow laws
you might want to check
décret n° 2015-1783 du 28 décembre 2015
article R111-32, R111-33, and R111-34
national parks you may cross also have their own rules
you could also not give a shit, you will by fine as long as you're discreet
maybe check on the swiss side of things, they're zealous cunts, i would personally avoid switzerland entirely

Logistics like this are what make this kind of trip difficult. You have to be super flexible about where you plan on staying and how far you’re willing to go.
