the easiest view is tank hollow trail (dirt road), there's a gate that I think it just open for hunting season (check arcgis for state game lands for exact dates)
there's a view that WOULD be good at the end of the dirt road that takes you to tank hollow but I think it's pretty obstructed (let me know if you get there), the dirt road is gated so you would have to walk or bike to get to the end but I think there's a view at the end

glen onoko isn't closed, they just closed the trail that's right along the water, cuz korean tourists would come by bus in winter without spikes and fall and die in the winter
you can still access the falls and the cliffs just not as close to the water
the main attraction is the trail along the west rim of the lehigh gorge (forge the name of the trail) but its 1000 ft to the top and then a hike for 5-6 miles each way and it looks like the views get even better if you go past the main first one (hetchel cliffs or something like that)
and you can loop back with the trail along the river esp if you have a bike

you can rent bikes, you can get a shuttle from one end of the trail to another so you can take the rail trail downhill
I've heard bad things about the scenic choo choo

there's also a trail near town that's slightly easier than the main gorge rim trail - it's only 500 ft you just park next to someone's house its kinda weird and then it's basically a very rocky road up to where the old incline plane used to take you and there's two views - one of the river, one of the town (which is really nice)

also a free decent view at the 100 mile view outside of town

there's also a cabin that was owned by the town doctor years ago - abandoned now but on public land with a nice view

I forget the name of the doc offhand but its basically across from the tank hollow trail view, but with a better view
there's a road to it - but its gated and owned by silver ridge hunting club - its on my list to ask if they would let me drive to the cabin - probably gonna say no but worth asking

there's a video on youtube by an "urbex" type of guy on youtube showing you can also hike to that view a different way - seems like you park at the long scenic loop view trail just north of weatherly, and then you do that trail for a while then probably just blaze through the woods over to the cabin - druckenmiller cabin there just remembered the name

hickory run has nice camping and an ok but easy to do view of the lehigh river (alltrails somewhere)
you can also sneak into their showers after a hike so you don't get heat-rash after a sweaty hike...

but, I recommend going an extra hour to the endless mtns if you have time there's lots of near (but difficult) trails there
frozen run vista, grays run vista, mehoopany creek vista (warning xtra hard) but this hike also could take you to virgin fir trees past the view if you are very very fit and so inclined I think the info is on endless mountains wordpress

also ricketts glen waterfalls, and eagle's mere is a cute town with a museum

try to find gray's run vista from bodine mtn rd (probably an off trail hike the coordinates of grays run vista are on endless mtn wordpress)
he's the district attorney of sullivan county (where the endless mtns are) and he has a hiking blog with lots of useful information and weird hikes in PA esp NEPA

then report back if you found grays run vista
there's also a driveable view on bodine mtn rd if you fail
he's really the endless mtns specialist

he lives in pa and does really cool hikes I do hikes he does sometimes (they are always hard)

I don't think this is in the area you are looking for (its south) but coral caverns is cool and the owner is legit crazy he mentions "science tells us" before introducing any fact about the cave as if his tours are usually creationist amish (maybe they are)

but your main focus should be hiking as much of the gorge at lehigh as you can if you are fit do the main trail to hetchel's tooth cliffs and keep going if able, the full loop is maybe 10 mi and 2000 ft elevation gain just guessing but the furthest away views are sorta the prettiest it looks like (just from photos ive seen ive yet to do the full gorge loop its on my dream list)

there's also tons of waterfalls in the mcintyre wild area some you can swim in (right side of the road) some you have to hike straight up the hill on barely trails to access (left side)

also google maps lists this as permanently closed (though there's multiple parking areas one at a house that's private so google could just have the wrong address) so maybe you should double check before going but this is a nice view of the delaware river closer to you
there's two views - one to the right down a sketchy steep slope, and one to the left of a bridge
