Agricultural slavery like cotton picking was basically the same as modern migrant worker field hands with again no real possibility of improving your condition. Although some slaves did in fact manage to buy their freedom by doing work on the side so even back then there were ways to escape the cycle and climb the ladder. The difference between antibellum slavery and modern working class wage slavery is less than we'd like to admit.On the other hand being a slave tasked with hard labor like digging canals was pretty hellish, they dropped like flies and frequently were worked to death. The Great Dismal swamp was filled with escaped slaves because they had them dig the inter coastal waterway through there and it was basically hell.Beyond that there were much worse forms of slavery in Africa, the Muslim world and in antiquity. In Africa they tended to castrate all the male slaves because they could just do slave raids on villages to get more and working them to death really didn't matter because new slaves were more available so they had less value to their masters. The worst forms of slavery tend to be in the ancient past, like mine slaves who basically went underground and never came back up, you worked picking away at a wall in darkness until you died.

The English lords took the first share of the potatoes they grew and let millions of them starve to death because their serfs had no value to them. They wanted their pay and if the serfs died that was their problem, they could always be replaced. During the height of the potato famine Ireland was still exporting food out of the country.In contrast a slave was a valuable asset for a slave master in the Americas if you beat them to the point that they couldn't work then you were losing money and if they died or ran away you lost your investment so even if you were an asshole you had an interest in keeping them healthy and at least content enough that they wouldn't try to run away.

If you look at the prices of slaves the idea of abusing them is absurd. One source says the price of a slave was the same as the price of a small house. I've seen other sources say more like an equivalent of $20k in today's money. Nobody was going to abuse an investment like that.

White men, typically the Irish and German, were the labor in the fields because tobacco cultivation requires some skill. The negro could always be found indoors either working in the warehouse or stripping leaves and packing hogsheads. All of this is well documented in post-civil war literature archived online.
