I used to fence epee and even with that big bell guard almost completely covering the hand, if your opponent isn't controlling your blade, it is trivially easy to stab them in the hand.Once the guard was invented for swords, it was backported onto some knives to help prevent slipping. But it is not, nor has it ever been, a standard feature of knives. And yet they have always been prolific tools without an epidemic of self inflicted hand injuries.
