I'm mostly confused at why turkey is expensive too. That was always the trash meat they oversupply every year for November. I don't especially like pork, but it is the cheapest usually. Take a cue from East Asia and cook it/top it with fresh ginger, balances it very nicely. Or learn about Korean ssamjang, it's not hard to make. Super thin cut boneless pork shoulder (might have to cut it yourself unless you have an East Asian grocer/butcher near you) cooks easy and fast and is great with all kinds of sauces.
