Horse meat is very popular around my town (Calais, north of France). Most butcher shops and there is at least 4 in my direct neighborood are dedicated to horse meat. I like it as it's relatively cheap. It has a strong taste, great to make chili with. But I still prefere beef most. And horse sausages are like a local speciality, I buy them from time to time. But that's funny, horse meat is rather rare anywhere else in France. I don't know why it's so common in northern France. A true steak tartare is made of horse meat, thought.
