The legit way is to just charge more for the food/service so the employees are paid properly and the customer knows how much the food/service really is.

That goes on up there with sales tax. A thing that was intended to be paid by the business conducting the sales transaction. Yet the customer is ultimately the one footing the bill and too many people are ignorant of it.
