The early Church, including Jesus and the apostles, used the septuagint and the original translation was made at about the same time as the scrolls. The scrolls can authenticate certain things, but manuscripts were still made by hand.
How about when the first canons against judaizing were devised to reinforce the Church's stance against judaizing? Why call itself Israel even then?

because it's the oldest surviving scripture of the old testament therefore the closest thing to an accurate torah, it's not complete but some verses are such as the one i told.
Jesus didn't use the Greek bible, he likely used Hebrew scrolls or translated to Aramaic, the greek Bible was used by the diaspora living in Greece, maybe people spoke it.

because they wanted to preserve the ancient world religion status of Judaism, Romans respected the religion tied to a land and by calling themselves Israel they can practice Christianity without facing prosecution as long as they claimed belief in the old testament such as Jews did it.
it worked only for a bit before they realized they were dealing with a new religion, Christians got mocked and in their defense they started to call themselves true Israel.
so the romans were like "ok, if you're Israel then why you religion came to existence recently?".
and the Christians said "we are the continuation of Israel, the most ancient religion on earth".
