Hollow walls have a cavity for putting insulation. Dense walls use a different cooling mechanism and will average these temperature, while sealed insulated cavities allow for more efficient air conditioning.

Its basically concrete splashed over 1.5 inch thin wooden boards that have small slots between them so the concrete can ooze in and holds on. I believe the lathe refers to the wood. There are also plaster walls with metal mesh banking instead of wood.
I work in construction and often have to deal with cutting into the walls of old buildings and know how hard it is to cut this stuff up.

Seasoned, dry wood is one of the most durable and versatile materials in existence. The problem is, as with everything, planned obsolescene: wooden architecture that, if maintained, rivals masonry in longevity and practicality does sell, well, once. That and of course the loss of knowledge in handling the material. Wooden architecture used to be built to the same standards as sailing ships were. Alpine and woodland regions (all over the world, including the Americas) still feature amazing wooden architecture, that'll last longer than the cultures that built it.

It's easy to use, easy to maintain, easy to fix, easy to procure and treat - provided you retain the knowledge necessary. Traditional trades (e.g.: carpenter) and especially guilds are gone, crafts are neither learned nor taught, they are "certified" by bureaucracy and its arbitary (mostly ideologically/politically motivated) codes and/or substituted with [product/tool] that "does the job" good enough to fool the contractors/buyers long enough.
