The Mayo is technically safe for a couple months but in practice after letting it in and out of the refrigerator multiple times, it'll spoil within a month. Considering all that, if you buy in what is effectively bulk for an individual, they need to commit to eating the same thing daily, in a row, to properly use the food and make it cost effective. Only the most autistic succeed at this, normal people cannot as they have changing schedules and so forth. People convince themselves that they're saving money buy at the grocery, but if they accounted for all the food they're throwing away because it spoiled or even just because they got sick of it, they'd be confronted with a rude awakening

The only way to save any kind of money in the hellhole economy through food while living alone is to eat dehydrated garbage. Instant ramen is shelf stable, cheap, and can be bought in any quantity.

Second, the deli meat packets last 7 days. Cheese longer. What do you think the whole point of hard cheese was, anon? If you cant use a pound of deli meat in 7 days, divide it and freeze half. Thats what your sandwich shop does with presliced meat.

However, if you can use those ingredients elsewhere, you can manage to cut the cost of a sandwich by half.
