One of the reasons it's not done is because of the sonic boom issue. I still don't see it being a thing because it will be less fuel efficient but whatever technology they have to reduce sonic booms seems like it should do something to reduce the pressure wave at the front of the plane and reduce drag possibly.

The fact that they are using planes with extremely specific shapes to partially cancel out the sonic booms means that those shapes are unlikely to fit with the general expectations of passenger planes.If you can imagine the prototype in op's pic, but scaled up to passenger plane size, assuming it'd still work, you'd have an absolutely tiny cabin, a long ass nose of wasted space and I doubt much space for baggages, fuel, landing gears and such.
