I can see 2, maybe 3 interviews being acceptable. The first round should be with fellow coworkers in the department to assess technical competence. Basically a test to see how you'd do in various work situations. Second interview is with management. Ideally this is would be the final interview.

Where I work, we do 5 interviews (for software engineers):

1. Recruiter phone screening. I can appreciate this one see one because I've interviewed dozens of people myself and when there's so many applicants you need someone who's full time job is to filter the bullshit. It protects managers' and employees' time since they don't have to deal with obviously bad applicants.
2. Engineering Manager interview. Makes sense since they are the ones who will be the candidate's future manager.
3-5. Technical interviews. We do an architecture interview and 2 coding exercises. Usually companies fuck this up by either putting more interviews or retarded exercises that don't test anything useful. I would keep the architecture interview and one single coding exercise (1 hour each) IMO.

Also, don't force the candidates to meet in person for all interviews if you are going to schedule them separately, that's retarded.

The most "rounds" I've got was 2 phonecalls with recruiter and hiring manager, then "proper" third round that was with hiring manager and overseas team / central team, then I've got phonecall feedback that they want me I negotiated salary and they called me back with bigger amount. After that they did screening etc.

So I've got like 3 "proper" rounds, but also bullshit 2 or 3 calls, CV uploaded on different requisitions, fuckton of mails with back & forth etc.

By far worst / most dragged interview process, whole took like a month till closing and then waiting 3 months at my previous job for my contract to end.

I can't imagine applying for my job when being unemployed or about to be unemployed.

And yes, it's big american corporation. In German one in 2017 I only got CV stage and 1 interview.

I do hiring. I'm not Goldman Sachs but I answer to that sort of rich for the quality of my company's service.
I do one interview, preferably in person, but I'll also do it over the phone.
2nd interview is the training session. I know by the end of the slideshow who isn't worth offering a contract to. I'd rather cut them a cheque for a few hours paid training and then turn them down, then waste the hours of my time and company money interviewing them multiple times in person.
We'll do same day interview and training to save a trip.
But thats the difference, as an actual manager its my best interest to make hiring fast, cheap, and efficient.
As others have pointed out, HR exists to do the opposite and justify its own existence.
Everyone has at least a 3-month probation period clause where you can fire for no reason at all. Hell you can make it 6 months if you want. And even if they play good employee for half a year and go to shit after, is it really that hard to bullshit up 3 strikes to iron clad their firing?
Its actually very hard to sue for wrongful termination unless it was clearly a human rights violation.

Using probationary periods for your screening doesn't work much when your job posting gets 300 applicants, 100 of which are decent options. I doubt its very applicable for careers where even decent staff are useless for the first year or so either.

I already got a job on another company the day before but I went to the interview to see if its better or not.
We kinda laughed it off and I told her I dont feel like working under a chick that I face fucked a few days ago. She kinda agreed to that. We ended up talking about shit for the rest of the interview, pretended to be normal when the team manager showed up, then fucked after hours.
Fun times. Still think about it from time to time.
