It's a bit of a leap of faith to say the nonbiblical church managed to successfully decide on and assemble the proper canon of inspired books (and if so, which canon is that?) while also not being the one true church. I do think you can logically avoid this issue if you say you don't follow "the bible" but rather Jesus, and just say that the bible is a historically accurate depiction of what jesus did and taught. That seems to be what you're saying and I do respect it
