Because such a profound act of belligerence would turn the world against the US and Israel and trigger another cold war? In a stroke they would become the most despised pariahs in all of human history to the point of redeeming Adolf Hitler and taking his spot?

If we nuke another country for ANY reason, that trust gets damaged. In the current situation, we would unambiguously be the bad guys here. Nuking iran at this point just because we are embarrassed that they didn't roll over for us when they pose us no direct military threat would be an indefensible escalation. The US would become a pariah state basically overnight, and the resulting sanctions would destroy our economy, which depends on a great deal of international trade.The rest of the world would have little choice but to do this, despite the hard it does to their own economies as well, because the alternative is the vastly more dangerous prospect of nuclear combs being normalized as an acceptable weapon of war. Nobody wants to be on the wrong side of a nuke hitting their capital, least of all the politicians that live there. So they are strongly motivated to throw the entire book at anyone who so much as thinks about use them. Hell, our supposed excuse for going after Iran in the first place is that they threatened to maybe one day HAVE a nuke, not even threatening to use one!
