try red onion on a bbq pizza or use sauteed minced red onion and tomato with ginger garlic to make butter chicken masala, it makes a hige difference.
red onions are also great on sandwiches, and make a unique french onion soup
shallots could have been used here but roasted reds have a special afterflavor and umami

finding unroided meat is as simple as going to a local butchers in any town or city surrounded by farms and legal hunting land.
I can buy privately butchered veal, mutton/lamb or cow of many specie, venison and privatelt farmed pig, chicken or grab my blowgun and go harvest another 10 european starlings for a stew since they are an invasive species and thus have no wildlife protections.
I live in a small rural town of less than 2000 and our butchers sell unpozzed beef and pork sourced from a local cattle ranch.

Go on the experimental farm network and look for tomatoes bred by Joseph Lofthouse. He has put many years of work into undoing much of the inbreeding of domestic tomatoes. Try something from the Mission Mountain Tomato grex or Hummingbird F2. You will end up with a bunch of plants with a very wide variety of traits that you can select for as you please. They will be much more vigorous and disease resistant than normal heirlooms.
