A lot of reasons. The primary one being that the Greek gods aren't subtle. If you talked shit about Zeus he'd just murder you or turn you into some animal as punishment. No one takes Zeus seriously in modern times which is incompatible with his personality. We also haven't found any fossils or evidence of any of the mythological creatures described in the myths. We never found the Cyclops, Minotaurs, colossus or anything else.
