I dont understand how war works, whats the point is casually just dropping bombs every now and then? Why doesn't the US just go all out on a heavy assault? Same thing with Russia and Ukraine, why are they wandering around in open fields? Why not attack like a major city or something and end it?

It's why there's never any resolution, why he bombs them in the middle of negotiations. Instead of dropping hundreds of tons of ordinance trying to hit a factory, it's easier to have a guided bomb be dropped on a single point. The point is to target infrastructure and valuable targets. Can have an army if your production facilities are gone. Can't have an air force if your airports are torn up and have no jets. A regular army can't march if the enemy air wing is miles above the ground. When the war is over the captured country can be rebuilt cheaply and quickly. Total war can still work but is reserved for special times.
