Also forgot the aeons old classic like tallow, lard and properly canned stuff. There is also any sugar based syrup that last basically forever, like worst case scenario it might dry up if in contact with the air, which doesnt make it unedible. This is just talking real life though and not whatever wacky caricature you have in your head of what's healthy. IRL peasants grew leaves / vegetables because you can put seed in the ground and have something edible in 10 days, even if said thing had almost no nutritional value or energy.

I don't believe that plant nutrients of any kind, even fruits, are even "necessary", they can help for fresh fruit but there's an obvious limit you hit after having a couple pieces of fruit every meal. You're not being healthier having 2 handfuls of cherries vs 3. Vitamin c is used in a lot of things but competes with sugar for uptake anyway and is used to digest sugar, without a sugar-heavy diet it's not that necessary to eat huge amounts of it.

You have to weigh it against any other form on investment. From a purely monetary standpoint ignoring taste change over time, rot potential, etc, would you gain more money over the same period if you bought a bunch of food or if you bought anything else, like stocks, a house, etc? Quick google search says food as a whole inflates by 3% a year whereas a stock index is 8%+ per year (its been much, much more in recent years though). So just from an inflation standpoint, you'd be better off just putting that same money in an index fund and buying the food whenever you're ready to eat it.

Not much to it really, depends on the meat but for say kangaroo which is a decent baseline, half an inch thick strips, cut off all the skin, any fat etc, you just want meat, rub it down with apple vinegar, salt, vegemite (unironically) or whatever spices you want, stick it in a bag or a container for a day in the fridge to let it all soak in, then you've got two options, hit it with another round of salt and then air dry it somewhere clean and dry for 4-5 days, or stick it in the oven for 8-10 hours at 140°F ish, real low for an oven, otherwise grab a cheap food dehydrator and use that, same temp and time, they're also great for fruit etc as well.

We have some big river catfish, too. Nothing huge, but each year someone will pull up a 50-60lb flathead. Frogs aplenty. Some big snapper and alligator snapper turtles (getting rare, almost a delicacy). Wild turkey and pheasant, just good birding in general.

Lots persimmon trees and fruit bushes. Nut and fruit trees. Seasonal morel mushrooms.

Don't have any pics to share, my apologies. I am kinda blessed to be in such a great biome with the family traditions I was raised with.
