We can get the historical day-to-day weather like the temperature or if a storm came through written reports. This is only good up to ~200 years ago, although it depends on the place in the world. Some countries could be reporting it in papers, journals, shipping documents, etc. and others maybe never bothered. Historical data is really neat.

Beyond that, it gets difficult because you really have to rely on scattered reporting and generally people only talked about the weather if it was a major event or weird. Realistically there's probably some mud writing about a really hot winter in some part of the world and then nothing else. For old old large events, it's erosion and polar cores, then just guessing based on modern weather knowledge. You can never guess the actual weather of a place past a few hundred years at best.
