AF1 is the plane with the president regardless of what that plane is. now it might not be. if the plane declaring itself to be was AF1 which never had Trump on board had been shot down, then the US military would have reacted as if the POTUS had been blown up, all the while a different plane, a cargo plane, would have had people saying "no we have POTUS" and a guy declaring himself to actually be Trump would have got on the radio and said "i am trump i am alive" .this would have been the most absurd event in US history, more so than 9/11.
