Thus when the eggs come down the chute they're covered in blood, shit and other unmentionable fluids. So they have to wash the eggs. However, this washes off the cuticle, a natural antibacterial coating applied to the egg during the laying process to protect the fetus during development (if there was one). With the cuticle gone, and being that it has to move through an innately bacteria-prone environment, the egg is now vulnerable to infiltration by bacteria including salmonella. This is why American fridges have an egg shelf; their eggs genuinely do need to be refrigerated for food safety reasons, while eggs from other parts of the world don't. Just another way in which the US has pushed capitalism to such obscene self-destructive extremes that the system is now killing itself.
