They are assessing the property at a value they KNOW I can’t sell at to get even more money.

I mean county commissioners have to have their yachts and mansions. Somebody's got to pay for that. You can protest. You have to supply real estate listings of comparable properties. They will then come out and do an in-person assessment of your property instead of the drive by they soaked you for. An in-person assessment could result in even more taxes being billed.
