Then cows, but mainly dairy. It wasn't till jews took over the stockyards in the 19th c that cattle ranching for meat became the standard. The US has been made over in the jews' storyline that it was always a "cowboy" nation but it wasn't. The shift from eating game meat and horse to cow was totally a kosher thing. Look into who owned the Chicago packing and slaughter houses.The whole "cowboy" thing is kiked at a level you don't learn in school and have to know from having ancestors on these shores in the 1600s and early 1700s. Bovines were work animals; pigs foraged in the eastern woods of the US (and the farming/rural people there came from Forest traditions in Europe). They required no special care. Bovines require extreme care, as do horses. But work oxen require much less care than cattle, who are, frankly, a pain in the ass. Though the early dairy breeds (from Europe, and pre 1600s) are very sweet beings.
