Modern pagans do not hold any fixed beliefs, they will assert any position that goes against current mainstream opinions for the whole sake of trying to sell this as a personality, which they otherwise lack. Back in 00's they were some of the most militant atheists because at that time that was considered the somewhat controversial and angered the Christian majority. Now, however, atheism has become accepted in most parts of the Western world and in some places even mainstream, so they had to turn to something new, because atheism no longer made them feel "special". The choice fell upon paganism, because it is so vague and has such a disorganized system of beliefs that you can make just about anything out of it. Feminists can pick Valkyries and claim it is all about gender equality. Liberals can focus on the homosexual acceptance parts and conclude it is the first gay-friendly religion. Right-wingers can claim its main focus point is racial purity and ancestor worship. And this convoluted structure of views and beliefs makes it next to impossible to criticize or even discuss constructively - there are no fixed dogmas, just an array of myths and stories from which you can draw just about any conclusion. And this is more or less by design, because modern pagans do not seek to actually discuss their own religious views, they only subscribe to paganism to attack other people that actually do have a structured well-defined system of beliefs. This is why every pagan thread is an anti-Christian thread with few exceptions if any, since discussing paganism itself is a pointless endeavor. At the end of the day paganism is merely a cry for attention.

Your problem is that you are exclusively defining 'god' under abrahamic montheistic definitions, when every other historical religion didn't work by those rules. The Olympian Pantheon were basically just extremely powerful people, terrible in their might but full of human flaws. the Norse gods were LITERALLY just people with cool toys, to the point that the Norse 'gods' had to eat the special fruit of immortality on a regularly basis to keep themselves from growing old and dying, and Thor needed not only his iron gloves but also his magic belt to be able to wield Mjolnir. Take away their high level gear and the norse gods were vastly less impressive.
