At what age does a video game begin to feel like a chore?
I can play a game of chess, or board and card games and actually have fun, but modern gaming feels like a chore like an actual 9-5 work grind, i have no idea when this feeling came over me, but i had an epiphany while replaying some older classick games, esp GTA games.

This is the ultimate mechanic of video games and once you feel it, its over, not even nostalgia can bring you back.

All open world games are linear games with extra steps because the plot, story beats and conclusion are all mandatory: thus player choice is invalidated. It's not your age.
It's the games themselves.
To keep you playing, they put loot in boxes that are timed releases of items with gambling mechanics.
To get the loot, they have you do extensive repetitive tasks, just like work at an assembly line.
To do enough work, you need to devote day and night to the game... but you can buy special keys for special lootboxes with that time, or with real money.
That's why games are built this way today. Make the game addicting enough for you to enjoy playing it, and then hold carrots on a stick in front of you saying "you can get this right now if you pay with real money".

I've been playing the original Need for Speed Most Wanted from 2005 recently.
Each race is fun and quick. The milestone gimmick is annoying to grind through, big oversight, but the longest race is 12,5 minutes and it's one of the last circuits.
This game was made for turning your console on, getting to the supercar you can't afford IRL, and racing it within 2-3 minutes.
There's no task list with petty rewards for logging in.
There's no mission where you have to drive X amount of miles today to get an XP boost that's still too weak.
There's no girl yapping in your ear telling you what to do. She texts you and you can click it away.

Gaming went completely the wrong way when someone decided that microtransactions were a viable business strategy.
They're no longer entertainment. They're nothing more than casinos with a fancy animation.

I think the reason for this is because the gaming industry has essentially unanimously adpoted a handful of game engines for all their games, making them all similar and easier to pump out. I also think most modern developers aren't passionate about gaming, they just see the job as just another means to an end-- their paycheck.

Yes, but that's purely about your attitude.
Other people play chess and have virtually no fun. For many even if not done professionally, it becomes an agitating grind to study openings, or one particular opponent's style etc because their ultimate goal isn't to have fun, it's to satisfy their ego since chess rankings, and competitive wins become a foundation of their identity, and every game an assault on their self worth.
It's the same with video games. You can try to keep up with the people at the top of the game, or you have fun with the game until you don't.

In all honesty op: switch to roguelikes but be wary: (traditional) roguelikes are like anime and most suck.
But you can start/stop at any moment, playthrough to completion is usually 2-4 hours.
Even caves of qud that plays like fallout2 can be completed in a few hours.

I think it's less lack of time and more the time spent doing it. If you were 13 playing GTA:SA you probably weren't old enough to play VC or GTA3, so this was a brand new experience. I would say open world realistic maps killed it, but DayZ mod was one of the great games of all time and was huge.

I think the thing that really killed games for me is the lack of challenge. Instead of making quests which require increasingly more skill, they just become more laborious and time consuming. The goal is accessibility, which means making completion possible by a foid. This creates the possibility of selling boosts to reduce completion time.

I initially loved the original Shogun Total War. Then I noticed it built to a huge crisis and then I finally destroyed my #1 enemy and it became a long mopping up operation of conquering fortresses. Boring

Now you mention it, there's been a new modification for Rome and Medieval 2 Total War.
Basically some devs have managed to crack the exe open and recompiled the code so they can now modify everything that was previously hardcoded and limited.
Just as an example, there was a maximum faction and province count limit. Those limits have been removed.
The games were 32-bit. They're now 64-bit, which means they can use more than 4GB of memory (no more large address aware needed).
The turn times in the original game were kinda slow even with fast PCs. They're instant now. Absolutely instant. Blink and it's done, that's how fast.
But there are other changes available too, like improved lighting, making the games DX11, new graphics settings so you can max out level of detail and keep every 3D model rendered at any distance, and improved scripting support.
The famous LOTR mods and other mods like Europa Barbarorum II and Stainless Steel HIP can be made much, much more advanced and larger in scale.

Oh yeah, they fixed the pike issues with Medieval 2.
And they improved firearm units so they're less shit.
And they're working on 40-unit armies, as evidenced by someone mentioning a UI experiment for it.

Over The Top WW1 is underrated.
Imagine Mount & Blade or Holdfast in WW1 but it's faster, there's machine guns and artillery, there are tanks and biplanes, officer airstrikes and gas attacks, and you can dig your own trenches and build fortifications.
The game was a little rough at launch but now the US faction is available it's insanely fun and runs well.
