Because they aren't. Building what is essentially a perpetual motion machine is. In fact, it's even more implausible because you hope to get more return energy than what is contained in the fusion reaction.

Stars work because of gravity. If gravity stopped, the fusion in stars would stop. Even if humans were to somehow be able to harness gravity and somehow were able to build anything capable of sustaining the heat such a reaction is needed to generate, said gravity would compress the Earth into something the size of the moon.

It's not going to happen. Attempting to is just wasted resources.
