Restaurant Kitchens can turn into biohazards in a matter of days, So if you have a head chef get sick, or hit by a car and he's in a coma, you have no idea what the state of that kitchen will be next week. Another touchstone to look for is a restaurant that advertises who the chefs are, that forces them to accept responsibly for poisoning everyone.
