Jury trials are fucking gay because lawyers can select the jury and will always choose fucking idiots.
If you ever get into legal trouble and don’t have near 100% certainty a jury will let you off, a plea deal is probably your best bet.
That is, unless the plea deal is so unreasonable your life will be over regardless.

Dismissal with prejudice only happens in America if there's been prosecutorial misconduct, like what happened in the Alec Baldwin case where it was discovered that the prosecution had concealed evidence.

It never happens just because of a hung jury. They'll keep on retrying the case as long as it takes, unless the prosecution decides to drop charges or there's a plea deal.
