Because a racial slur is only as insulting as the negative connotations associated with the group it refers to. "Nigger" is offensive because "Niggers" are loud, obnoxious, shiftless, violent, ugly, and stupid. What does "gringo" connote, that is comparable? It means you belong to the white / anglo-saxon race, who conquered and enslaved millions of lesser peoples. There are some negative attributes you can ascribe to that race, but they pale beside the inherent greatness that comes from belonging to it. Calling you gringo is calling you the heir to the greatest human achievements. Trying to make that into a slur only underscores their own inferiority.
