Because evolution selects for fitness, and if something is already fit for its environment it's not going to change much. We don't actually know how much horseshoe crabs evolved over the last ~half billion years. They hit upon a very efficient body plan early on and haven't needed to evolve in shape. Fossils don't preserve their soft tissue or their genome, just their shell. That being said, the 445 million year old fossils are different from modern horseshoe crabs, and even when the "modern" horseshoe crab emerged 225 million years ago, it still was a bit different from the current ones.

In another case, the hebrew word for seed "sera" (or whatever it is I'm not looking it up) is used a dozen times in the OT and it always means literal offspring of humans or plants except one single time; when Isaiah describes the suffering servant (Jesus) he says he will see his seed flourish.
Christians 100% have to say that is figurative seed or else Jesus missed a prophetic fulfillment because he had no literal offspring.
There is no way to honestly say that is not cherry picking (and jews love kvetching as such). But that does not mean it's wrong. It fits entirely and the whole passage is filled with figurative language so it's not a stretch. It says things like the suffering servant will grow up as a tender plant. Is the Messiah a literal plant? Obviously no.
