Any data center would be a significant load, you would need to build it in orbit in chunks to even be viable and by the time you finished a project like that all the GPUs you bought are now near obsolete Then there is the issues of data link, power, cooling, repairs and maintenance, and insuring a multi billion dollar payload strapped to a rocket engine every launch.
