You need farmers using their hardware, familiar with their land and in practice in production so if something happens and food availability drops they've got something in the pipe to mitigate that demand shock. You subsidize farmers to prevent a freak weather event or hurricane causing a collapse scenario because at the end of the day you can't get food from the fed or a datacenter.
