I personally like Polish, it's like a soft mix between French and Russian, once you get past the szczrzężśą. Ukrainian and Russian I haven't really had a proper go at yet on account of the alphabet. Currently attempting Greek, still getting my head around the alphabet, but I don't find the pronunciation too hard. Haven't had a go at any Asian languages, but I'm told the easiest one to start with is Korean.
