There is a reason that North Carolina is ranked 10th by Hispanic population in the US and why the Hispanic population has grown from low single digits to 15%+ of the states population in the last 20 years and has grown by 40% in the last 10 years alone and it is not because North Carolina shares a border with Mexico.

They come to North Carolina for the jobs at the massive industrial size meat processing plants that exist in that state. The state legislature all know that every employee at the Tar Heel facility is likely an illegal migrant but they don't care because the plants bring in huge amounts of tax dollars which the politicians use to get reelected and line their own pockets.

The migrants don't report each other and they don't report the company because they have no incentive too. Even if the job is gross, hard labor, and dangerous they don't care because they are getting paid under the table while simultaneously using federal and state welfare programs to cover as much of their daily needs as possible and then every paycheck they go to the local Hispanic owned grocery store and send their money back home to where ever they came from and because the exchange rate is so drastic the dollars go much further than their home countries currency which allows their families to invest in properties and businesses in their own country which brings generational wealth.

Then assuming they don't get horrifically injured on the job or their body breaks down from the grueling daily labor a few decades go by they go home as the respected head of the family and the grandkids and the great grandkids take care of the family businesses and properties that great granddad funded with American dollars.

The point is that it puts you on the level of a person making 2-3 times that, if gibs are paying for your beaner kids as well. If it didn't work they wouldn't do it.

Why would he. He could ask the client to pay less on the books and pay some more in cash. So that he could charge less, in exchange, because he'd also pay less in taxes.
Then use the money to pay his workers without a contract. It's how the grey economy works. A lot of construction work is done like that.

Of course that means the workers accept the risks for the sake of getting untaxable money.

that simply isn't true. I've met many illegals in my time and they told me about how they worked. Even if paid under the table many still paid taxes and received 0 gibs. Contrary to popular belief tax evasion is not that easy and employers won't just let you get away with it.
