Yes so you have to compromise somewhere.
And different projections are better for different things.

Mercator is optimized for navigation but really quite terrible for teaching geography or showing world stats.
This new projection is better for showing stats and also looks pleasing so it's a good one to use by the UN.

In my country we normally use a projection where coordinates map to meters in real life (within one millimeter deviation), all coordinates are positive numbers and the y-coordinate is always bigger than the x-coordinate.
It's nice, makes calculating areas super easy, but it only works for small countries like mine and you need a different projection for every small country.
