The cooked full chicken that doesn't sell is shredded and sold as refrigerated torn chicken the next day and then after a few days of not selling it is then turned into chicken salad and if that is unsold then it is trashed. Consider at every one of these steps the chicken is often under cooked and left to finish on the hot table (not hot enough to fully cook) and is left out for too long on hot table and then left on counters and not refrigerated properly. Maybe different stores are better.In terms of biggest scams seafood/meat. I lived in a landlocked state at that point and all seafood and meat in meat department came in half frozen. Your never frozen chicken usually came in frozen and we had to leave in a cooler until the ice melted to put out for sale. This department has the highest profit margin again at least where I was. A $1m sale week would be 25% meat/seafood at minimum. Holidays where grilling or cookouts happened it would jump to 40%. Bakery, produce, deli in that order typically were negative or at best a few hundred dollar profit even on the best weeks. The rest of profits were split between pharmacy, frozen, grocery and vendor (beer, coke, chips, non bakery bread, etc). This was over 10 years ago so might have changed but I doubt it.
