Made me some frozen raos chicken cachetorri from scratch tonight. Ck chads where we at
I cook and meal prep once a month. Spend all day one weekend cooking but I have enough food except for breakfast for the month. Breakfast is usually just eggs and maybe toast most days and I'll throw a steak in with it once a week. Usually get whatever steak cut is on sale in bulk, have wagies at the store cut them to thinner cuts and then freeze. Have 10 ribeye in the freezer right now, I think I will thaw one for this weekend.

I made me chili. The pic was at the start of the chili before I added the sliced onions to it and cooked it in. Pressure cooked pinto beans drained and put in the pot (pressure cooked the night before for 1.5 hours in beef broth), sliced onions, 1 large can of diced tomatoes, tablespoon of minced garlic in water, 1 small can of green chilis, 1 small piece of dark chocolate, 1 tablespoon blackstrap molasses, 1/4 cup brown sugar, 4 or 5 tablespoons of chili powder mix, 1/4 teaspoon ground chipotle pepper. Served with shredded cheddar on top.

>>544239637> Grass fed costs more to produce because it takes longer to finish beef on grass than on GMO corn+goybeans.Completely false. Slaughterhouses aren’t raising cattle from birth, they are buying from ranchers. Ranchers aren’t spending money on feed unless they are out of pasture, then they are feeding with forage as it is the lowest cost. They then sell cattle by weight, not by age and not by diet. When the cattle are bought, they go to finishing and the clock starts ticking, as you can only fatten them up on grains for so long (typically a month or so, also time document no pharmaceuticals going into them) before the cost of feed (not just corn and basedbeans, a mixture of grains with forage) outweighs return on investment.

Set aside.Add the sugar to the cheese in a large bowl & mix well.Whip the cream until it holds stiff peaks & fold into the cheese / sugar mixture.Break up the chocolate & put it in a food processor; pulse just long enough to reduce it to chips of your desired size. Add to the filling and mix well.Add the Irish cream. If the mixture seems stiff enough to take it you can add a little more booze if desired. ok before this thread is jannied for being off topic I will post my recipe for real nigga chili. first you need dried peppers. the ones I use are as follows:>4 or 5 ancho peppers>4 or 5 guajillo peppers>3 pasilla peppers>5 or 6 new mexican peppers>a big handful of arbol peppersthe exact types and ratios aren't super important, you just want a mix of the wrinkly black ones, long smooth ones, and little red ones. cut the stems off all of them and remove as many of the seeds as you can be assed to and start soaking them in hot water while you do the next steps. the second ingredient in chili is beef. I use about 5-6 lbs of whatever I can get. I like chuck but it doesn't matter if it's tough dog food shit because you're going to cook the hell out of it. cut it into cubes and brown it in some kind of grease. don't try to do it all at once you want it brown not gray. once all the beef is cooked sweat a diced onion and a handful of minced garlic cloves and throw them in a big pot with your meat. now take your peppers that have been soaking and put them in a blender with 2 cups of chicken stock. at this point I also add 3 or 4 chipotles out of a can and a few tablespoons of vinegar, or vinegary hot sauce. blend that shit up and throw it in your pot with enough beer to make a soup consistency. season with salt, about 2 tablespoons of ground oregano, and 4 tablespoons of powdered cumin. you can also throw in some fresh peppers if you want. I like serrano and those hot thai peppers, but you can use whatever. just don't use fucking bell peppers that shit doesn't belong in chili. simmer everything for 4-5 hours until the meat is tender. when it's done cooking take a few tablespoons of masa flour and mix it with cold water until it makes a thin slurry and then stir that into your chili to thicken it up. that's it. no tomato and no fucking beans.

It starts by using the rendered tallow on top, you take a bunch of it to another pot, add normal wheat flour to make a halfway roux/mud and then add the beef cubes while mixing it up, then add the chili little by little by carefully stirring.

>>544241572I lost all of my pictures due to sdcard failure, or I'd post them. But essentially it's a homemade incubator made out of a large chest cooler using 2 Inkbird controllers in series, one for the high-level limit on the ambient air temps, the other for deep rice mycellium temps, and a small desk humidifier with a timer for 30 seconds on, 5 minutes off, active heating and cooling with high pressure 120v server fans controlled by the Inkbird to pull fresh air through a repurposed vacuum HEPA filter cor cooling, the heating is a ceramic lizard heater. Once the steamed cooled and inoculated rice has the appropriate mycellium (literally 2 days from start to finish), I pour diluted vodka over the Koji rice and let it set in a gallon glass jar on the kitchen counter. As it breaks down the rice, the Koji mush will start to turn brown from the light. Eventually it will get dark as Onions Sauce and be sweet as molasses, strain through cheese cloth then mixing it with actual Onions Sauce and some Sake and boiling it down into a thick syrup makes Teriyaki Sauce. The recipe that I followed called for using distilled Sake to do it, but as I don't feel like going through the extra effort to make the distilled Sake, I just use vodka and a bit of store-bought Sake instead. The distilled Sake is simple, you take a batch of Koji rice and put some water and yeast over it, wait for it to ferment a few days and then distill it and dilute it. I just don't because I don't think it needs it as you can just add a bit of Sake wine to the syrup to give it that extra Sake flavoring. Either way it's still really good, and if it's not sweet enough, just add some extra sugar to the finished syrup.

>>544242622>many foods we have today are named after ancient dishes with very little in common to modern recipesThat's a problem with modernity and the natural instinct to try and change something out of convenience or pleasure, doesn't mean it's right. If we want to make a comparison there's a reason some euro countries, notably France and Italy who are the kings of western cuisine, did pen down with specific details some of their famous recipes via the italian Accademia della Cucina and the french Cuisiniers de France.>the idea that we should drop all of those words and come up with brand new ones>its just not how language worksPerhaps not words but naming conventions, it's not about the language but the culture or lack of thereof.>when an american says chili he is not talking about a mexican dishThey are but it's so far raped and reconverted that it stopped being the same meal, kinda how birria nowadays is being raped or how taco stopped being so since the 50's, it's a deconstruction done in real time but chili being one of the first instances. The thing here is how chili as a recipe name should be handled, there's two things that share the same name and origin but are completely different in execution and taste, it is silly to think americans should drop their meal and stick with the original but it is also silly to still call it chili. The confusion is more about a traditional vs. muttified argument and i have to admit i fall into the purity spiral, i "fixed" this view by learning from my elders that recipes are concepts, not clearcut instructions, there needs to be flexibility but there's so much one can tolerate without pointing out the problem.>its a stew with a flavor profile of mexican origins but is not itself mexicanIt is native american as mentioned before, it predates the current states and even nations but the popular and actual famous version is an euro (french, german, spanish) and native hybrid.
>>544242777well the easiest answer to your question is yes to all of those things language is how you use it words mean what you mean by them i could tell you what i mean when i use them in my mind the important part of chili is the chili pepper it can have bean or meat or both it can have tomato or not of course the further you get from the average or ideal definition the more people will disagree with your definitionbroadly speaking i think that certain foods will be defined by a collection of attributes as in it must be beyond a certain threshold of similarity to the ideal definition to qualify for instance a hot dog is in my opinion a sandwich it fits enough criteria that i feel comfortable calling it that a corn dog however is not a sandwich the difference being that the hot dog bun was bread before adding the wienerhowever the breading of the corn dog was merely batter before being prepared an easy way to think about it is what other food would have to be excluded to exclude this onethe argument for why ho dogs are not sandwiches is that the bun is a single piece of bread rather than the distinct slices of the ideal sandwichhowever excluding hot dogs by this definition would also exclude subswhich would mean that subway (the sandwich shop) would not sell sandwiches which is unacceptable to me

>>544242649>Tell that to the Mexicans that prepared it thenNo mexican who makes beef head calls it barbacoa unless they are shitcanos or moved to the US at toddler age.You WILL be corrected in every single state here if you order barbacoa made with beef head, there's plenty of in-fighting in terms of what is barbacoa but it is unanimous that doing stuff with the beef head is not barbacoa.Quickly put Barbacoa literally means BBQ, it means a recipe AND a technique, what you did as a technique (pit cooked) is indeed actual real barbacoa that even people here forget or ignore out of convenience because city slickers or lazy housewifes make recipe barbacoa in slow or pressure cookers.Traditionally pit cooked beef and pseudo versions fall into a couple of recipes, to make things short you either cook tough streaky beef or cook fat-rich cuts, making tough cuts fall into tenderness and seasoning it nicely is what comprises the genre of barbacoa, making fat-rich cuts render most of their fat away and emulsifying said grease into a seasoned thick broth falls into specialty recipes, the most famous one being the head (tacos de cabeza). The head is a very fat-rich part of beef and i don't think i need to explain more, you might get it easily, calling a pit-cooked head "barbacoa" is like saying you made a cake and then post a pie.

>>544243082>in my mind the important part of chili is the chili pepperthe problem with that is that for a lot of yankee "chilis" the chili pepper is a total afterthought. you will see recipes with over a gallon of tomato and beans and only like 2 tablespoons of generic chili powder. that would be like making paprikash with only a dusting of paprika or curry with only a sprinkle of curry powder.
Can someone recommend a good taco meat recipe, a la seasoning? Right now I just cook hamburger in an iron skillet with lard, and add cumin, chili powder, and paprika. >>544244260>subs will often not be sliced all the way throughThen they are not sammiches, simple as>i would look into the history of soupIt is interesting because soup actually means bread but i haven't delved so much into it>answer my previous inquiries pleaseWhich ones>>544244386>lot of folks saying chili is some specific thingIt is>i was given to understand it was any potage involving chili peppers beans and meatYou were given wrong perceptions."Chili" is a regional northern way of saying chile aka hot pepper, with the "i" replacing the "e" in many two-syllable words as an accent and/or playful way, usually involving ch/sh because the northern accents "whistle" these sounds, for example leche (milk) becomes leshi, pinche (petty/damned/insignificant/commis de cuisine) becomes pinshi, noche (night) becomes noshi, mapache (racoon) becomes mapashi, chicles (bubblegum) becomes shiclis, and so on.So usually the only people saying chili/shili were people from said region, which is also the border one to the US, and "doing chili" usually meant creating a dry red pepper base sauce that could be used for tons of recipes, a famous one being carne con "chili" (beef in dry hot pepper sauce), but other ones include chorizo norteño (mexican chistorra) and red pozole, but Chili became associated with the beef recipe. Many americans call hot peppers in plural "chili" merely because of this association with how bordering people called them. Then it associated with the recipe itself as it was a popular recipe in the southwest. And thus, even in most of Mexico all around, chili is associated with a specific recipe from the northern area itself despite it merely meaning hot pepper in its origin region. The recipe has quite different variants too but the concept is strict: Meaty beef cuts slowly cooked in dry red hot pepper base sauce, that's it.The base sauce is the more controversial fact about the recipe but it is unanimous to never include beans.

If we are technical it means hot pepper and if we are a bit more flexible in practical terms it means the base sauce, which you don't even use either.>im starting to think you are talking out of your assI don't agree about the sloppy joe thing either, denounce Applebee's' for naming it so>american chili Doesn't exist, you make another thing entirely
>>544244903I personally differed from the leaked Taco Bell recipe, which you can find online. This is my own version: The Exact Spice Ratio (For 1 lb of Beef)Measure out these ingredients into a small bowl before cooking:* 4 teaspoons Chili Powder* 1 ½ teaspoons Fine Garlic Salt* 1 teaspoon Onion Powder* 1 teaspoon Powdered Beef Bouillon (or 1 tsp Better Than Bouillon paste dissolved in your water)* ½ teaspoon Ground Cumin* ½ teaspoon Mexican Oregano (rubbed)* ½ teaspoon Accent MSG (Monosodium Glutamate)* ¼ teaspoon Unsweetened Cocoa Powder (just a small pinch for rich color and earthy depth)* ⅛ teaspoon Cayenne Pepper (adjust up or down for your preferred warmth)---How to Cook it 1. Brown & Brighten: Brown 1 lb of ground beef in a pan over medium heat along with a small can of green chili peppers. Once fully cooked, drain the excess fat.2. The Base: Turn the heat down to medium-low. Add a small can of tomato paste directly to the center of the pan. 3. Bloom the Spices: Dump this entire custom taco spice mix directly over the tomato paste and meat. Add a **small splash of water** (about 2 to 4 tablespoons) to help the paste and spices dissolve and integrate.4. Stir everything continuously for 2 to 3 minutes. You will watch the raw, "chalky" texture disappear as the heat blooms the fat-soluble spices, gelatinizes the tomato paste sugars, and dissolves the bouillon and MSG into a glossy, perfectly cohesive meat paste that tightly grips your taco shells.5. Serve: Reduce heat to low/keep warm and enjoy!---Flavor Note: Because both the garlic salt and the beef bouillon contain sodium, no extra salt is added to this recipe. Taste the meat at the very end of step 4 and adjust only if you prefer an even saltier profile
>>544245015that might be interesting if i considered culture to be anything more than retarded tribal nonsense>regional definitioncool, so what's the actual definition?potage made of chili pepper
>>544245463>>544245801Thank you!>Once fully cooked, drain the excess fat.I find this hilarious. The meat is so lean today, you cannot do this even if you wanted to. They kept this in the recipes from 40 or 50 years ago because back then there was a lot of excess fat to drain. I want that juicy tasty fat to turn my burrito tortilla transparent!
