Getting a good smoker is something that you will not regret and the good smoker will enable you to consistently cook good BBQ. WillThere are a bunch of good choices out there...pellet, ceramic, offset, etc. I have a Primo ceramic cooker (like a big green egg, but made in USA). I don't regret buying it. It does everything from steaks to brisket well, but nothing cooks brisket as well as an offset. My brisket cooked on the Primo is close, but the bark is not quite as good. Everything else is there. My pork ribs are as good as you will buy anywhere. In fact, that is one of the reasons I like eating BBQ at restaurants is the comparison and damn Pinkerton's brisket is top notch. Also, don't sleep on smoked beef cheeks. Any idea what smoker you will buy?

>>544675967A weber or pellet grill is a good choice. The downside of the bad ass offset smokers are crazy expensive to buy and expensive to run (lots of wood/charcoal) which is why I don't have one. The pellet grills are the easiest to cook on and churn out consistent good BBQ, hands down and it is not even in question. The Webers are the cheapest route, but more technique and user input involved, but there are tons of Weber brisket, etc. technique videos on YT. There was even this Asian dude that made his name on the competition circuit using Weber grills. I forget his name.
