IT'S BONGOVER

brokies should be purged

I recently saw that lamb chops are $30 a pound. That is crazy.

That said lobster has always cost a lot. Not sure why they would remove it from the menu unless people just aren't buying it.

Best part of the lamb is the breast, it's $3 a pound where I live.
>>
i mean steak dinners have always been a loss leader for menus, still should have them regardless.
for example a ribeye steak at 9 oz cost me $7.99 per from the food distributor back in 2017 so for your average food cost of 30% i had to charge $27 just for the beef alone not including any accompaniments so i lost a few dollars on each one sold (mostly because i had to be realistic with pricing) but it brought the total value of the bill up and it generally would be offset by women ordering things with infinitely better margins to subsidize the cost

Which things on the menu had the best margins for you?

Well that is the goal. Specialization is considered important to an advanced economy, but tech often erases the need for that.

lobster caught here in the UK is very affected by fuel price because fisherman can only land relatively few if any and so have have to put all of their fuel costs onto the lobsters they land. there is a constant supply in general from scotland to the london market but there isn't an excess and some days and weeks there will be over-demand. fishermen always complain about their margins, but a small catch lobster fisherman doing it himself had much higher wage needs and much higher fuel costs.

fpbp raise the prices and keep the brokie niggers out
>>

I always thought fish prices are a huge scam, especially given historically (salted preserved) fish has been a poor mans food.

Steak here starts at 35€ for 220g no way in hell is that not profitable. Grassfed from a local butcher is 30€/kg
>>

Mostly appetizer things, daily rotating soup and addons such as extra side sauces
The best which i made 8 dollars over foodcost were deep fried pickles
Per order of 9 of them with sauce it only cost me 34 cents which includes the pickle spears, flour/egg/panko for breading and the chipolte aioli
I would go through about 40L of pickles a week just for them they were insanely popular with women.
jalapeno poppers were great too. the soup was pure profit since the cost of ingredients were low and hand cut kennebec fries were good since i was getting 50kg of potatoes for 30 leafbux and doing them yourself is cheaper than buying mccain or whatever store-bought ones including labor.
Basically anything without an animal protein as the primary ingredient paid for everything else. But to have a functional restaurant you have to lose money on big ticket items to get people in the door
>>
>>545268128
That's probably because the cheap pasta dish is 20€ and costs 4€/kg.

It all depends on what the reaturant pays itself per 220g remember a menu price has to pay for the food cost in itself plus overhead and profit if applicable
you never know if they could just be breaking even on it
>>
>>545268193
I had no idea that much thought had to go into it, I'd never have made it in the restaurant business. Thanks.

Those faggots mainly eat beans on toast anyways.

Meanwhile in the US.

I worked in a nice place as a chef for about three years in my 20s and I will never, ever eat out anywhere lol.

You have no idea how much mold and rat shit you get served.

Ribeye is 14/lb vs 70$ for a steak lol

Learn to cook plebiscite

Pasta is 12€ a total ripoff. Food used to be a lot cheaper I could eat high end steak for 15€ every day pre war.

>In the colonial era, lobsters washed up in massive piles on coastal beaches and were considered "cockroaches of the sea". They were frequently used as crop fertilizer, fish bait, or feed for livestock and cats.

yeah it takes alot of to get and stay profitable
i walked into that kitchen and it was losing money hand over fist and it took me around a year and a half to actually start turning a profit which almost gave the owners husband a heart attack once it stopped being a black hole to toss money in. I had to go out of my way to do a bunch of tertiary things that most restaurants ignore
>building a rapport with the local community and other restaurants
>social media and print media marketing
>constantly battling with staff, regulars local spirits to make even the smallest of changes to anything for the better
>menu research constantly staying ahead of trends/viral memes
designing and costing a menu is honestly the easy part but constantly bringing in clientele is the real hard work oh and slaving away 12 hrs a day 6 days a week
>>
>>545265858
Lamb chops have always been overpriced
>>
>>545268375
What I mean is the profit margin is so much better for the pasta than the steak.
>>
>>545268433
But neither is fishing tech the same.
>>
>>545268405
I know exactly how it's extracted. I've been running a cockroach milking farm for years. do check your local child labor laws unless you have access to many midgets with tiny hands
