Both countries rely heavily on one another and are much closer to official partners than rivals. China can't take Taiwan without pissing off its main trade partner. The US doesn't actually 'own' Taiwan either, the CCP just says "it's part of China" and no one says "nah actually we own it!" so both are able to maintain the status quo. You're basically asking "Why can't Sauron win?" Not in that the chinks are in any way equivalent, but that this is simply how it's scripted.
