There's varying levels at which people can close their eyes and visualize things. Personally, I can fairly easily "see" a full color apple (of various varietals) in a differing art styles including photo realistic. The stereotypical "painted bowl of fruit" style being the easiest. More complex stuff or volumes of items it can get muddled. You can probably do this too, you've just never really sat and tried.
