It's like I tell the bros with their favorite streamers: you don't actually know what it's like to hang out with them. Streams/videos are where they're the center of attention and you're both there during it for a common interest.
If you were to meet for real, whether at work, school, a hobby space or just to hang out, your dynamic may be different. One or both of you may prefer doing different things when it's not stream/gaming time. They might still be a great person, but lots of stuff about being face-to-face can affect how a streamer interacts IRL off-camera.
