The hot dish is fairly easy to make, just some leftover chili on some mostly done tots, then cheese on top and bake. The chili itself is the real star though, I like to use either diced chuck or short rib, onion, tomato, garlic, homemade stock (ideally beef but usually chicken), all the usual chili spices (cumin, oregano, black pepper, paprika) and for the hot peppers I like to add dried (habanero plus guajillo and/or ancho), fresh (jalapeno or serrano) and sometimes also a couple chipotles in adobo. Beans optional.

I've tried two different methods. One is with two bowls, one smaller submerged in another filled with ice and salt. Then I whip whole milk and heavy cream with a mixer.
