You do also see more people at the other extreme as well, so people with bodybuilder physiques are more common too, but it doesn't follow that because there are more bodybuilders there are fewer skinnyfats. Both bodytypes have increased in proportion and there's much greater diversity in body types these days.

That man you're referring to was probably a butcher or carpenter or something, or otherwise worked a job that required him to use his body daily and built up his muscles. A true skinnyfat physique is only possible with prolonged daily inactivity. It's not possible to have that physique with a physical job. It's most common with NEETs and people who work desk jobs. Those types of lifestyles were much less common in the past.
