I like my borgars about 5 or 6oz. Don't bother weighing, just roughly aim for turdpounders. Salt, msg, onion powder, and black pepper just before applying heat. American cheese is a non negotiable unless it's lamb. For lamb you blend yogurt with feta and some green shit(spearmint, oregano, even parsley, dill, or cilantro if that's all that's handy). Needs a whole slice of onion 1/4-1/3" thick, seared but still crunchy.Pecan is best wood, then hickory, apple and cherry are roughly tied. Mesquite is ass, leave that to the texans and californians.Mushrooms are never out of place. Fried in butter and garlic it's better than dessert.

Around last spring I decided that I'd rather pay a bit more up front to buy something that lasts for 10+ years then have to replace stuff every couple, and so far the policy has worked out great. Next major upgrades are going to be my pans, probably going stainless steel or high quality cast iron like your Wagners for example.
