Almost all of the raw livers I've eaten were bitter and likely frozen for at least a month before I got them. I've eaten plenty of raw steaks from Walmart. They're great even though they're from sabotaged animals. The ones in your freezer will most likely be unappealing. I've eaten some raw meat that was frozen for a long time, and it seems like anything frozen longer than 6 months loses nearly all taste, has a much worse texture, and smells strange. If you really want to be careful you can look for a source of higher quality food. Wild animals are the healthiest animals, particularly when they're far from human civilization. The next best thing would be farmed animals that are unmedicated and fed well. That's rare to find these days and expensive too. The organs I buy online come from good animals, but they're all frozen for probably at least a few weeks which degrades the taste, texture, smell, and nutrition. I'm too poor to get anything better. I might be able to hunt and fish for good food, but first I would need to get licenses, equipment, knowledge of how to hunt and fish and butcher animals, and more. I'll do it eventually
