i live in south korea
there are broadly two ways to prepare and eat kimchi
either consuming it with the seasoning intact or washing it off first
when we make simple dishes with kimchi, we usually prepare kimchi fried rice or kimchi pancakes
when cooking something quick and simple like shin ramyun we sometimes slice up some kimchi and boil it along with the noodles to deepen the flavor
heres a tip
instead of just adding kimchi to the broth, sauteing it in sesame oil first makes it taste even better
